🛒 Ingredients
For marinating the meat:
- Beef – 1 kg
- Yogurt – 1 cup
- Ginger-garlic paste – 2 tbsp
- Red chili powder – 1 tbsp
- Turmeric powder – 1 tsp
- Garam masala powder – 1 tsp
- Salt – to taste
- Mustard oil – 1/2 cup
For the rice:
- Basmati rice – 1 kg
- Bay leaves, cinnamon sticks, cardamom
- Salt – to taste
Others:
- Potatoes – 4–5 (halved and fried)
- Fried onions (beresta) – 1 cup
- Kewra water – 1 tbsp
- Ghee – 3–4 tbsp
👨🍳 Cooking Steps

Marinate the beef
Mix all marinade ingredients with the beef and let it rest for 2–4 hours (overnight is best). -
Boil the rice
Cook the rice until it’s about 70% done (do not fully cook). -
Layering
In a large pot:- Bottom layer: marinated beef
- Then add fried potatoes
- Then add rice
- Top with fried onions, ghee, and kewra water

Dum cooking (slow steam)
Cover tightly and cook on low heat for 45–60 minutes.
🔥 Tips for Best Taste
- Don’t stir too much (it will break the layers)
- Place a pan under the pot to avoid burning
- Add a little saffron for amazing aroma and color 😍
